Ok guys here is my monthly meal plan for May...


As I'm so new at this I'd love your feedback on how you're finding using the meal plans and shopping lists... do you prefer the shopping lists weekly or monthly? I will keep providing them both ways for now...

Also, if you have any favourite recipes please let me know and i'll be sure to add them next month!

Week 1 Meals

1. Chicken Schnitzel salad with cheats garlic aioli (Recipe not yet available online - Sainsbury's magazine May. Most ingredients in store cupboard for this one!)

3. Jamie Oliver's pea, bacon & goats cheese risotto (just omit the bacon for a veggie feast!)

Week 1 Shopping List

2 x chicken breast or two breaded chicken fillets

Shallots

2 x baby gem lettuce

Greek yoghurt

Potatoes

Cauliflower

Onions

Tomatoes

Ginger

Coriander

2 x packs pancetta or bacon lardons

Risotto rice

Parmesan

Thyme

White wine

Goats cheese

Cooking chorizo

Corn tortillas

White cabbage

Limes

Red onion

Pickled jalapenos

Cherry tomatoes

Feta

Eggs

Stir fry veg pack

Spring onions

1 x pouch cooked rice

Week 2 Meals

1. Fruity lamb tagine with honey and almonds (Recipe not yet available online, Sainsbury's Magazine May. I am going to omit the orange extract and serve with nan breads. You can also cut out some of the dried fruit in this to save money)

3. Italian-inspired sausage plait (Sainsbury's Magazine May)

4. New season chicken traybake (Sainsbury's Magazine May)

5. Pasta Bake - follow jar instructions


Week 2 Shopping List

Dried prunes

Golden sultanas

Onions

Boneless lamb leg cut into chunky pieces

3 oranges

Lemons

Pomegranate seeds

Blanched almonds

Parsley large

Nan breads

1kg lean minced beef

2 x 400g tins of chop tomatoes

Courgettes

300g full-fat cream cheese

chives

Cheddar cheese, grated

2 x jar of roasted peppers in oil

filo pastry

Dried rosemary

800g sausage meat

500g ready rolled puff pastry

Eggs

350g new potatoes

Spring onions

Asparagus

2 x chicken breast

Pasta Bake sauce


Week 3 Meals

4. Loaded Avo & Halloumi Fries (a bit of a treat, my own recipe, below)

- Cook oven fries as per packet instructions

- Meanwhile chop up some avocado into chunks or slices and chop up some lettuce and/or other salad items

- Fry cubes of halloumi in a little oil in a pan

- Once the fries are cooked, arrange the halloumi chunks on top of the fries together with the avocado.

- Dress with your favourite sauce - I suggest perinaise or sirancha and mayo

- Serve with a side salad

- Enjoy!

5. Burritos (own recipe, below)

- In a pan soften some onion in some oil. Add the mince beef and cook until nicely browned.

- Add some fajita, cajun or taco spice and let simmer for a few mins.

- Prepare your favourite garnishes (I like avocado, lettuce, limes, grated cheese)

- Add a tin of kidney beans or sweetcorn to your mince.

- Warm some tortillas and serve with the mince and garnishes - enjoy!

Monthly Shopping Lists

If like me you do your shopping monthly, see below for one large monthly shop and 3 smaller top up shops. I'd highly recommend shopping monthly if you have the space as it allows for cost saving when buying in bulk.
